Colombia Wilder Lasso

From all of the coffee producing departments in Colombia, Huila is especially celebrated.

The region’s high altitudes produce coffees prized for their complex acidity and bold florality and this 100% Pink Bourbon variety is no exception.

Wilder Lasso is part of a coffee farming family and returned from a successful career as a veterinarian to help support his family. As well as Pink Bourbon he also grows Tabi and Striped Bourbon.

This particular coffee was carefully hand picked in order to use only the ripest cherries and then pulped. The coffee was then placed inside GrainPro bags and exposed to a dry anaerobic fermentation for 65 hours.

Afterwards the coffee was gently washed and placed on raised beds until achieving a moisture content of 10.5 %.

Pink Bourbon is currently under research in order to determine its origin, at this point, the mutation is thought to have originated in San Adolfo at an altitude of 2100 MASL.

This month as well as roasting this amazing coffee, we are stoked to be able to showcase the work of artist Martin "Robot man" Horspool, we've wanted to use one of his creations on our labels for ages and finally made it happen.
